This Cranberry Almond Biscotti is a delightful Italian treat that combines the tartness of dried cranberries with the crunch of almonds. It's perfect for dipping into your favorite coffee or tea.
2¼ cups all-purpose flour
1 cup white sugar
1 teaspoon baking powder
½ teaspoon baking soda
2 egg whites
2 eggs
1 tablespoon vanilla extract
¾ cup sliced almonds
1 cup sweetened dried cranberries
Preheat the oven to 325°F (170°C). Line a baking sheet with parchment paper.
In a medium bowl, combine the flour, sugar, baking powder, and baking soda.
In a separate bowl, whisk together the egg whites, eggs, and vanilla extract.
Add the egg mixture to the dry ingredients and mix until just combined.
Fold in the sliced almonds and dried cranberries.
Divide the dough in half and shape each half into a log approximately 14 inches long and 1½ inches thick. Place the logs on the prepared baking sheet.
Bake for 30 minutes or until the logs are firm and lightly browned.
Remove from the oven and let cool on the baking sheet for 10 minutes.
Transfer the logs to a cutting board and slice diagonally into ½-inch thick slices.
Place the slices cut side down on the baking sheet and bake for an additional 10 minutes or until the biscotti are golden brown and crisp.
Let the biscotti cool completely on a wire rack before serving.
