Directions:

Spread ½ cup of enchilada sauce evenly on the bottom of a 9x13-inch baking dish.
Place a tortilla on a flat surface, spoon about ⅓ cup of the beef mixture down the center, and sprinkle with 2 tablespoons of shredded cheddar cheese. Roll up the tortilla and place it seam-side down in the baking dish. Repeat with the remaining tortillas.
Top the Enchiladas:
Pour the remaining enchilada sauce over the rolled tortillas, ensuring they are well-coated. Sprinkle the shredded mozzarella cheese evenly over the top.
