Ingredients:
For the crust:
1 ¾ cups chocolate cookie crumbs
¼ cup melted butter
For the filling:
16 ounces cream cheese, softened
8 ounces mascarpone cheese
1 cup granulated sugar
4 large eggs
2 teaspoons vanilla extract
2 tablespoons all-purpose flour
For the espresso mixture:
1 cup strong brewed espresso or coffee, cooled
2 tablespoons coffee liqueur (optional)
For layering:
20-24 ladyfinger cookies
Unsweetened cocoa powder, for dusting
Directions:
Preheat oven to 325°F (163°C).
Combine chocolate cookie crumbs and melted butter; press firmly into the bottom of a 9-inch springform pan to form the crust. Bake for 10 minutes, then cool.
In a large bowl, beat cream cheese, mascarpone, and sugar until smooth.
Add eggs one at a time, beating well after each addition.
Mix in vanilla and flour until just combined.
Dip ladyfingers briefly into the espresso mixture, then arrange a layer over the crust.
Spread half of the cheese filling over the ladyfingers.
Repeat with another layer of dipped ladyfingers and the remaining filling.
Bake for 50-60 minutes or until the center is almost set but still slightly jiggly.
Cool completely on a wire rack, then refrigerate for at least 4 hours or overnight.
Before serving, dust the top with unsweetened cocoa powder.
