These soft, chewy cookies capture the comforting flavors of banana bread in a convenient handheld treat. With ripe bananas, a hint of vanilla, and a touch of sweetness, they're perfect for breakfast, snacks, or dessert.
Ingredients:
2 cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
1 cup butter-flavored shortening
1 cup white sugar
1 medium ripe banana, peeled and mashed
2 large eggs
1 teaspoon vanilla extract
Glaze:
⅓ cup confectioners' sugar
3 tablespoons unsalted butter, softened
1 tablespoon milk (or more as needed)
1 teaspoon vanilla extract
Directions:
Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper.
In a bowl, combine flour, baking soda, and salt.
In a separate bowl, beat shortening and white sugar until smooth. Add mashed banana, eggs, and vanilla; mix well.
Gradually add the dry ingredients to the wet mixture, mixing until combined. The batter will be sticky.
Drop rounded tablespoonfuls of dough onto the prepared baking sheets, spacing them about 2 inches apart.
Bake in the preheated oven for 10 to 15 minutes, or until lightly browned.
While the cookies are baking, prepare the glaze by beating confectioners' sugar, butter, milk, and vanilla in a bowl until smooth. Adjust consistency with more milk if needed.
Remove cookies from the oven and transfer to wire racks. Drizzle glaze over warm cookies and let cool for 25 minutes before serving.
