Mexican Picadillo is a comforting and hearty dish that combines ground beef with potatoes, peppers, and a blend of traditional seasonings. This flavorful meal is versatile and can be served over rice, with tortillas, or used as a filling for various dishes.
2 tablespoons olive oil
2 medium yellow potatoes, diced
1 medium onion, chopped
2 jalapeño peppers, chopped
3 cloves garlic, minced
1 pound ground beef
2 medium tomatoes, diced
1 cup beef broth
1 teaspoon paprika
1 teaspoon Mexican oregano
½ teaspoon ground cumin
Salt and black pepper to taste
For serving: Cooked white rice or tortillas, fresh lime wedges, chopped cilantro
Heat olive oil in a large skillet over medium heat. Add diced potatoes, chopped onion, and chopped jalapeños. Cook for about 5 minutes until the vegetables begin to soften, stirring occasionally.
Add minced garlic and ground beef to the skillet. Break up the meat with a wooden spoon and cook until browned, approximately 5 minutes.
Stir in the diced tomatoes, beef broth, paprika, Mexican oregano, ground cumin, salt, and black pepper. Bring the mixture to a boil, then reduce the heat to a simmer.
Cover the skillet partially and let it simmer for about 20 minutes, or until the potatoes are tender and the sauce has thickened. Taste and adjust seasonings as needed.
