Ingredients:
1/2 cup butter, softened
1 cup white sugar
2 eggs
1/2 cup milk
2 teaspoons vanilla extract
2 1/2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon ground cinnamon
For Coating:
1/2 cup white sugar
1 teaspoon ground cinnamon
3 tablespoons butter, melted
Directions:
Preheat oven to 350°F (175°C). Grease a 12-cup muffin tin or line with paper liners.
In a large bowl, cream together the butter and sugar until light and fluffy.
Beat in the eggs one at a time, then stir in the milk and vanilla extract.
In a separate bowl, whisk together the flour, baking powder, salt, and cinnamon.
Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Do not overmix.
Spoon the batter evenly into the prepared muffin cups.
Bake for 18 to 22 minutes, or until a toothpick inserted into the center comes out clean.
Allow muffins to cool in the pan for 5 minutes, then remove and place on a wire rack.
While still warm, brush muffins with melted butter. Mix the sugar and cinnamon for the coating in a shallow dish, then roll each muffin in the cinnamon-sugar mixture until coated.
