These homemade waffle fries are crispy on the outside and perfectly soft on the inside. They're a delightful snack or side dish, ideal for game nights or pairing with burgers.
2 pounds russet potatoes, peeled
Peanut or vegetable oil, for frying
½ teaspoon salt (or to taste)
Prepare Potatoes:
Fill a large bowl with ice water.
Using a mandoline with a waffle blade set to ¼-inch, slice the potatoes crosswise, then rotate 90° and slice again to create the waffle pattern.
As you slice, add the potato pieces to the ice water to prevent browning.
Heat Oil:
In a large heavy saucepan, add 2 inches of oil.
Clip a candy/oil thermometer to the side of the pan.
Heat the oil over medium heat to 310°F (155°C).
Par-Cook Fries:
Drain the waffle fries and blot them dry with paper towels.
Working in batches, fry the waffle fries for 4 to 5 minutes until just cooked through but not browned.
Remove from oil with a slotted spoon and place on wire racks to drain.
Final Fry:
Increase the oil temperature to 375°F (190°C).
Return the fries to the hot oil in batches and fry for 1 to 2 minutes until golden brown.
Drain on paper towels and sprinkle with salt.
Serve:
Transfer cooked fries to a 200°F (93°C) oven to keep warm while frying the remaining batches.
Serve hot with your favorite dipping sauce.
