This White Cheese Chicken Lasagna offers a creamy, comforting twist on the classic Italian dish. Layered with tender chicken, spinach, and a rich white cheese sauce, it's a crowd-pleasing favorite that's perfect for family dinners or special occasions.
9 lasagna noodles
½ cup butter
1 onion, chopped
1 clove garlic, minced
½ cup all-purpose flour
2 cups chicken broth
1½ cups milk
1 teaspoon salt
1 (10 ounce) package frozen chopped spinach, thawed and drained
3 cups cooked, shredded chicken breast
1 (15 ounce) container ricotta cheese
1½ cups shredded mozzarella cheese
½ cup grated Parmesan cheese
1 tablespoon dried basil
1 teaspoon dried oregano
1 teaspoon ground black pepper
2 tablespoons chopped fresh parsley (optional)
Preheat the oven to 350°F (175°C).
Cook the lasagna noodles in a large pot of boiling salted water until al dente, about 8 to 10 minutes. Drain and rinse with cold water; set aside.
In a saucepan, melt butter over medium heat. Add chopped onion and minced garlic; cook until softened, about 5 minutes. Stir in flour and cook for 1 minute. Gradually whisk in chicken broth and milk, and bring to a boil. Reduce heat and simmer until the sauce thickens, about 5 minutes. Season with salt, basil, oregano, and pepper.
In a 9x13-inch baking dish, spread a thin layer of the white sauce. Place 3 lasagna noodles over the sauce. Layer with one-third of the ricotta cheese, one-third of the spinach, one-third of the shredded chicken, and one-third of the white sauce. Sprinkle with one-third of the mozzarella and Parmesan cheeses. Repeat the layers two more times, ending with a layer of mozzarella and Parmesan cheeses on top.
Bake in the preheated oven for 45 minutes, or until the top is golden and bubbly. Let stand for 10 minutes before serving.
Garnish with chopped fresh parsley, if desired.
