This Creamy Spinach Stuffed Salmon is one of my go-to dishes when I want to impress without too much effort. The combination of tender salmon and a rich, cheesy spinach filling is so satisfying, yet it’s keto-friendly and easy to make. It’s perfect for a weeknight dinner or even a special occasion!
Ingredients:
4 salmon fillets
1 cup fresh spinach, chopped
4 oz cream cheese, softened
½ cup shredded mozzarella cheese
¼ teaspoon garlic powder
Salt and pepper, to taste
Olive oil, for drizzling
Directions:
Preheat your oven to 375°F (190°C).
In a bowl, combine the chopped spinach, cream cheese, mozzarella cheese, garlic powder, salt, and pepper. Mix well until fully combined.
Carefully cut a slit along the side of each salmon fillet to create a pocket for the filling.
Stuff each salmon fillet with the creamy spinach mixture.
Place the stuffed salmon fillets on a baking sheet lined with parchment paper or lightly greased.
Drizzle olive oil over the salmon fillets for added moisture and flavor.
Bake in the preheated oven for 20-25 minutes, or until the salmon is cooked through and flakes easily with a fork.
Remove from the oven and let rest for a couple of minutes before serving.
