Cedar planked salmon is a flavorful and aromatic dish where salmon fillets are grilled atop soaked cedar planks, infusing the fish with a smoky aroma and delicate woodsy flavor. This method not only enhances the taste but also helps keep the salmon moist and tender. It's a perfect dish for summer grilling or special occasions.
3 (12-inch) untreated cedar planks
⅓ cup soy sauce
⅓ cup vegetable oil
1½ tablespoons rice vinegar
1 teaspoon sesame oil
¼ cup chopped green onions
1 tablespoon grated fresh ginger
1 teaspoon minced garlic
2 (2-pound) salmon fillets, skin removed
Soak the cedar planks in warm water for at least 1 hour.
In a shallow dish, combine soy sauce, vegetable oil, rice vinegar, sesame oil, green onions, ginger, and garlic.
Place the salmon fillets in the marinade, turning to coat. Cover and refrigerate for at least 15 minutes, or up to 1 hour.
Preheat an outdoor grill to medium heat. Place the soaked cedar planks on the grill grate. Heat until they start to smoke and crackle slightly.
Remove the salmon from the marinade and place it on the planks. Discard the marinade.
Close the grill cover and cook the salmon until it flakes easily with a fork, about 20 minutes. The fish will continue to cook slightly after being removed from the grill.
