Sausage Biscuits and Gravy is a classic Southern breakfast dish that combines flaky, buttery biscuits with a rich and creamy sausage gravy. This hearty meal is perfect for a comforting start to your day and is sure to satisfy your taste buds.
For the Biscuits:
2 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon salt
1/2 teaspoon baking soda
1/2 cup unsalted butter, cold and cubed
1 cup buttermilk
For the Sausage Gravy:
1 pound breakfast sausage (preferably sage-flavored)
1/4 cup all-purpose flour
2 1/2 cups whole milk
Salt and freshly ground black pepper to taste
1. Prepare the Biscuits:
Preheat your oven to 450°F (232°C).
In a large mixing bowl, whisk together the flour, baking powder, salt, and baking soda.
Add the cold, cubed butter to the dry ingredients. Using a pastry cutter or your fingers, cut the butter into the flour mixture until it resembles coarse crumbs.
Make a well in the center of the mixture and pour in the buttermilk. Stir gently until just combined; be careful not to overmix.
Turn the dough out onto a lightly floured surface and knead it gently 2–3 times. Pat the dough into a 1-inch thick rectangle.
Using a biscuit cutter, cut out biscuits and place them on a baking sheet. Gather any leftover dough, pat it out again, and cut additional biscuits.
Bake in the preheated oven for 10–12 minutes, or until the biscuits are golden brown.
2. Prepare the Sausage Gravy:
In a large skillet, cook the breakfast sausage over medium heat until browned and crumbled.
Sprinkle the flour over the cooked sausage and stir to combine. Cook for 1–2 minutes to eliminate the raw flour taste.
Gradually add the milk to the sausage mixture, stirring constantly to prevent lumps.
Continue to cook and stir the gravy until it thickens to your desired consistency.
Season with salt and freshly ground black pepper to taste.
3. Assemble the Dish:
Split the warm biscuits in half.
Ladle the sausage gravy generously over the biscuit halves.
Serve immediately and enjoy your hearty Southern breakfast!
