Chicken Pot Pie is a hearty and flavorful dish that combines tender chicken, a medley of vegetables, and a creamy sauce, all encased in a flaky pie crust. This classic comfort food is perfect for family dinners and is sure to warm you up on a chilly day
Ingredients:
1½ pounds skinless, boneless chicken breast meat
1 cup chicken broth
½ teaspoon salt
¼ teaspoon ground black pepper
1½ cups milk
3 tablespoons butter
1 onion, chopped
1 cup chopped celery
⅓ cup all-purpose flour
2 cups frozen mixed vegetables, thawed
1 tablespoon chopped fresh parsley
½ teaspoon dried thyme
1 (9-inch) refrigerated pie crust
1 egg, lightly beaten
Directions:
In a large saucepan over medium-high heat, combine the chicken, chicken broth, salt, and pepper. Bring to a boil, then reduce heat to low. Cover and simmer for 30 minutes, or until the chicken is no longer pink in the center and the juices run clear.
Remove the chicken from the saucepan and let it cool. Pour the remaining broth mixture into a measuring cup and let it stand; spoon off any fat. Add enough milk to the broth mixture to equal 2½ cups. Cut the cooled chicken into ½-inch pieces.
In the same pan, melt the butter over medium heat. Add the chopped onion and celery, and sauté for 3 minutes. Stir in the flour until well blended. Gradually stir in the broth mixture. Simmer, stirring constantly, until the sauce thickens and boils.
Add the chicken pieces, thawed mixed vegetables, parsley, and thyme to the sauce. Pour the mixture into a 1½-quart deep casserole dish.
Preheat the oven to 400°F (200°C).
Roll out the pastry to 1 inch larger than the diameter of the casserole dish on a lightly floured surface. Cut slits in the pastry for venting. Place the pastry on top of the casserole. Roll the edges and cut away any extra pastry; flute the edges by pinching together. Reroll scraps to cut into decorative designs and place them on top of the pastry. Brush the pastry with the beaten egg.
Bake in the preheated oven for 30 minutes, or until the crust is golden brown and the filling is bubbling. Let it cool for 10 minutes before serving.
