Ingredients:
1 cup all-purpose flour
1 tablespoon white sugar
2 teaspoons baking powder
¼ teaspoon salt
1 egg, beaten
1 cup milk
2 tablespoons vegetable oil
2 ripe bananas, mashed
Directions:
In a medium bowl, combine the flour, sugar, baking powder, and salt.
In another bowl, whisk together the egg, milk, vegetable oil, and mashed bananas.
Pour the wet ingredients into the dry ingredients and stir until just combined. The batter should be slightly lumpy.
Preheat a lightly oiled griddle or frying pan over medium-high heat.
Pour or scoop the batter onto the griddle, using approximately ¼ cup for each pancake.
Cook until bubbles form on the surface and the edges look set, about 3 to 5 minutes. Flip and cook until the other side is browned, about 2 to 3 minutes more.
Serve hot with your favorite toppings.
