For the shortbread base:
2/3 cup (150g) butter, softened
1/4 cup (50g) white sugar
1 1/4 cups (150g) all-purpose flour
For the caramel layer:
1/2 cup (115g) butter
1/2 cup (100g) packed brown sugar
2 tablespoons (30ml) light corn syrup
1/2 cup (120ml) sweetened condensed milk
For the chocolate topping:
1 1/4 cups (220g) semisweet chocolate chips
Prepare the shortbread base: Preheat the oven to 350°F (175°C). In a medium bowl, mix together the softened butter, white sugar, and all-purpose flour until the mixture is crumbly. Press this mixture into the bottom of a greased 9-inch (23 cm) square baking pan. Bake in the preheated oven for 20 minutes, or until the edges are lightly browned. Remove from the oven and set aside to cool slightly.
Prepare the caramel layer: In a medium saucepan over medium heat, combine the butter, brown sugar, corn syrup, and sweetened condensed milk. Stir constantly until the mixture comes to a boil. Continue to boil for 5 minutes, stirring frequently. Pour the caramel mixture over the slightly cooled shortbread base, spreading it evenly. Allow it to cool to room temperature.
Prepare the chocolate topping: In a heatproof bowl, melt the semisweet chocolate chips using a double boiler or microwave, stirring until smooth. Pour the melted chocolate over the cooled caramel layer, spreading it evenly to cover the entire surface. Let the chocolate set at room temperature or refrigerate for faster setting.
Serve: Once the chocolate has hardened, cut the bars into squares. Store in an airtight container at room temperature or refrigerate for longer shelf life.
