Ingredients:
2 cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
1 cup white sugar
½ cup butter, softened
2 large eggs
2 teaspoons vanilla extract
2 ripe bananas, mashed
1 cup fresh blueberries
Directions:
Preheat the oven to 350°F (175°C). Grease 3 mini loaf pans.
In a medium bowl, mix the flour, baking soda, and salt together.
In a large bowl, beat the sugar and butter with an electric mixer until light and fluffy.
Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and mashed bananas.
Gradually add the flour mixture to the banana mixture, beating until just combined.
Gently fold in the blueberries.
Pour the batter evenly into the prepared loaf pans.
Bake for 60 to 70 minutes, or until a toothpick inserted into the center comes out clean.
Cool the bread in the pans for 10 minutes, then remove from the pans and transfer to a wire rack to cool completely.
