Ingredients:
1 (9-inch) unbaked deep-dish pie crust
½ cup butter, softened
1¼ cups granulated sugar
3 tablespoons all-purpose flour
¼ teaspoon salt
3 large eggs
1 cup buttermilk
1 tablespoon lemon juice
1 teaspoon vanilla extract
⅛ teaspoon freshly grated nutmeg (optional)
Directions:
Preheat the oven to 350°F (175°C).
In a large mixing bowl, beat the softened butter and granulated sugar until creamy.
Add the flour and salt to the mixture, and beat until smooth.
Add the eggs one at a time, beating well after each addition.
Stir in the buttermilk, lemon juice, vanilla extract, and nutmeg (if using).
Pour the filling into the unbaked pie crust.
