For the cake:
2½ cups all-purpose flour
3 tablespoons strawberry-flavored gelatin (such as Jell-O)
1 teaspoon baking powder
1 teaspoon kosher salt

1 cup unsalted butter, softened

3 large eggs
2 teaspoons vanilla extract

For the frosting:

For the crumble topping:
25 golden Oreo cookies
⅔ cup freeze-dried strawberries
⅛ teaspoon kosher salt
4 tablespoons unsalted butter, melted
Preheat the oven to 350°F (175°C). Grease and flour two 8-inch round cake pans, lining the bottoms with parchment paper.
