1 teaspoon melted butter, or as needed

2 ounces 70% dark chocolate, broken into pieces
1 tablespoon butter

4½ tablespoons cold milk
1 pinch salt
1 pinch cayenne pepper
1 large egg yolk
2 large egg whites
1 pinch cream of tartar
1 tablespoon white sugar, divided
Prepare Ramekins: Preheat the oven to 375°F (190°C). Brush the bottom and sides of two 5-ounce ramekins lightly with melted butter. Add 1 tablespoon white sugar to each ramekin; rotate until sugar coats all surfaces, then tip to pour off extra sugar.
Melt Chocolate: Place the dark chocolate and 1 tablespoon butter in a heatproof bowl. Melt over simmering water, stirring occasionally until smooth.

Beat Egg Whites: In a clean bowl, beat the egg whites and cream of tartar until soft peaks form. Gradually add 1 tablespoon white sugar and continue to beat until stiff peaks form.
Fold Mixtures: Gently fold one-third of the beaten egg whites into the chocolate mixture to lighten it. Then, fold in the remaining egg whites until just combined.
Fill Ramekins: Divide the soufflé mixture evenly between the prepared ramekins. Smooth the tops with a spatula and run your thumb around the inside edge to create a small groove.
Bake: Place the ramekins on a baking sheet and bake in the preheated oven for 15 to 18 minutes, or until the soufflés have risen and the tops are set.
Serve: Dust with powdered sugar if desired and serve immediately.
