makes about 2 cups
1 teaspoon olive oil
2 garlic cloves, finely minced
1 shallot, finely chopped
2 cups chopped tomatoes
1 teaspoon dried oregano
fine sea salt, to taste
freshly ground black pepper, to taste
1. Add the olive oil to a medium-size sauce pot. Heat over medium-low heat.
2. Add the minced garlic and chopped shallot and cook until fragrant, around 2-3 minutes. Watch the garlic to ensure it doesn't burn.
3. Stir in the crushed tomatoes.
4. Season with oregano and salt and pepper to taste.
5. Reduce the heat and simmer until ready to serve.
