makes 1 pint
1 1/4 lbs fresh rhubarb, chopped
1 cup granulated sugar
1 teaspoon grated lemon zest
2 tablespoons + 2 teaspoons fresh lemon juice
1/4 cup Simply Lemonade (or just use water)
1. Combine the chopped rhubarb, granulated sugar, lemon zest, lemon juice, and Simply Lemonade in a large pot.
2. Bring the mixture to a boil.
3. Reduce the heat to medium-low and let simmer, stirring occasionally. Continue simmering until thickened, about 40 minutes.
4. Pour into a jam jar and use immediately.
