SAUCE:
□ 2 tbsp. flour
□ 2 tbsp. butter
□ 1/4 tsp. salt
□ 1/4 tsp. pepper
□ 1 can Carnation evaporated milk
Blend flour, butter, salt and pepper in saucepan over low heat. Add evaporated milk. Stir until thick and smooth.
Mix together:
□ 1/4 c. diced celery
□ 2 tbsp. green pepper, diced
□ 2 hard cooked eggs
□ 1 c. cooked rice
□ 1 1/2 c. chopped dried beef (2 jars) (rinse in hot water & drain)
Place beef mixture in casserole and pour cream sauce over. Top with grated cheese if desired. Bake at 350 degrees for 15 minutes.
