1/2 cup Canned Pumpkin
1/3 cup Honey
4 Egg-Whites -- Slightly Beaten
1/2 cup Buttermilk
2 tsp Baking Soda
3 tsp Baking Powder
1/4 tsp Salt
2 tsp Cinnamon
1 cup Raw Carrots, Grated
1 cup Raisins -- (optional)
1 1/4 cups Whole Wheat Flour
Mix all ingredients except flour.
Stir in flour just until moistened.
Spoon into muffin tins coated with non-stick cooking spray.
Bake at 375°F for about 15min.
