Pizzadilla (aka Quesadilla Pizza)

Ingredients

Makes one pizzadilla enough for one

Olive oil

2 large tortillas (to make cauliflower tortillas use this recipe)

½ cup / 4.4 oz / 125 gr marinara sauce store-bought or homemade

½ cup / 1.7 oz / 50 gr low moisture shredded mozzarella cheese

2 tablespoons grated Parmesan cheese, divided

Additional toppings, as desired

Directions

Preheat broiler to high and place a rack in the middle.

In a large skillet heat ½ teaspoon of olive oil over medium heat until it sizzles.

Reduce the heat to low and lay a tortilla in the skillet, then build the pizzadilla by spreading half of the marinara sauce over the tortilla all the way to the edges. Spread half of the mozzarella evenly over the tomato sauce all the way to the edges.

Place second tortilla on top.

Cook, swirling pan occasionally, until crisp on the bottom, about 2 to 3 minutes.

Carefully flip with a large spatula.

Spread remaining sauce evenly over tortilla all the way to the edges. Spread remaining mozzarella and half Parmesan evenly over tortilla all the way to the edges and add topping as desired.

Place skillet under the broiler until cheese is melted and starting to brown in spots, about 2 to 3 minutes.

Remove from the oven and sprinkle with remaining Parmesan cheese.

Slide pizzadilla onto a cutting board, cut into wedges and serve immediately.
