Fudgy No-Bake Brownies

Ingredients

Makes 16 brownies

Brownies

14 Medjool dates, pitted

1 ½ cups pecans (or walnuts)

6 tablespoons cocoa powder

2 teaspoons water

¼ teaspoon salt

¼ teaspoon vanilla extract

Frosting

4 tablespoons cocoa powder

4 tablespoons maple syrup

2 tablespoons coconut oil, melted

¼ teaspoon vanilla extract

Directions

Line a 8x8-inch baking pan with parchment paper. Set aside.

Place dates, walnuts, cocoa, water, salt, and vanilla extract in the bowl of a food processor.

Process until smooth, stopping and scraping the sides as needed. It will look a bit dry, that’s okay.

Transfer to the lined baking sheet and press firmly until evenly distributed. Place in the refrigerator to set.

To make the frosting, in a medium bowl combine cocoa, maple syrup, coconut oil, and vanilla extract. Stir until a paste forms.

Spread evenly over the dough.

Refrigerate for at least 2 hours, until set.

Cut into squares and have at it.

Keep in an airtight container in the refrigerator up to 2 weeks.
