Mint Choc Chip Frozen Yogurt

Adapted from The Sprouted Kitchen: A Tastier Take On Whole Foods

Ingredients

Serves 6 to 8

1 cup (2 large handfuls) fresh mint leaves, chopped

1 cup / 240 ml heavy cream

½ cup / 6 oz / 170 gr maple syrup (or honey)

2 cups / 400 ml 0% Greek Yogurt

2 oz / 56 gr +70% dark chocolate, chopped

Directions

Put mint leaves in a saucepan with the cream. Bring to a simmer over medium-low heat, stirring every now and then and pressing the mint leaves so that they release the oils. As soon as it comes to simmer, add maple syrup and stir to combine, then turn off the heat.

Let mixture steep at least for 30 minutes. Afterwards, pour the mixture through a fine-mesh sieve to remove the mint leaves. In a large bowl combine mint mixture with Greek yogurt, chocolate and whisk to combine.

Cover and chill in the fridge for at least 30 minutes (1 hour is best though).

Pour the mixture into an ice-cream maker and begin freezing according to instructions (my ice-cream makes takes about 20 minutes to get soft and smooth frozen yogurt).

Serve immediately or transfer to a covered container and store in the freezer (it will firm up quite a bit!)
