10 medium new potatoes, skin on
1/2 cup butter
1 teaspoon salt
1/4-1/2 teaspoon cayenne pepper
1 teaspoon chopped fresh parsley
Preheat oven to 450°.
Melt butter in oven-safe 13 x 20-inch pan or 2 smaller pans. Cut potatoes in half, lengthwise. Place cut side down in hot butter. Bake for 25 minutes, turn potatoes and cook an additional 15 minutes. Remove from oven, sprinkle with salt, cayenne pepper and parsley.
Serve hot.
