Oatmeal Bar Recipe
This is not a simple ingredient mix I have adjusted the ingredients to the point that the batch is pretty good sized and a complex mix. And it takes a rather large mixing bowl. I use a 13 in. diameter or larger. And it takes a 11 X 17 jelly roll pan (cookie sheet with sides (3/4") and a smaller one to hold the mix to bake. Oven 325 to 350 degrees?? I tend to bake slower at lower temperatures.
Moist Ingredients Mix together
1 C Peanut Butter
1 C Brown Sugar
1 ½ (+/-) C Milk (Add as needed to regulate moisture of mix)
2 Eggs (I use Jumbo)
6 t Vanilla Extract
½ to ¾ C Cooking Oil
Optional items
Molasses or Honey (used as sweetener and as extra moisture added later? )
2 T Chia Seeds soaked in water
Dry Ingredients (Blend together dry)
5 C Oatmeal
1 - 2 C Raisins
1 C Chocolate Chips
1 - 2 C Peanuts
1-2 C Coconut flakes or shredded
1 C Sunflower Seeds
¾ C Sesame Seeds
3+ T Cinnamon Powder
1 t salt
2 t Baking Soda
1 t Baking Powder
This mix will be crumbly when baked so I add flour(s) to mix and since I have trouble with wheat I use
Barley, Soya, Rice and/or Flax Bran. Wheat flour will influence mix some differently.
1 C Soya Flour
½ C Barley Flour
½CFlaxBran
Optional Dry Ingredients(which may require added moisture)
Scoop of Protein Powder
¾ C Powdered Milk for protein
I T Cocoa Powder
Blend Moist Ingredients and Dry ingredients separately and then blend together.
Adjust moisture to have a rather stiff but moist mix. If too dry mix the bars seem to come out crumbly. Spray pans with cooking oil.
Spread mix in pans and bake. Watch when done to desired level.
Cut to bars to size??
