Steak with Smoky Salsa

    • 1 can (14 ounces) salsa-style, fire-roasted diced tomatoes, undrained

    • 1/2 cup fresh cilantro leaves

    • 1/4 cup diced yellow onion

    • 1 tablespoon red wine vinegar

    • 1 teaspoon chili powder

    • 1 teaspoon garlic powder

    • 1/2 teaspoon coarse kosher salt

    • 1/4 teaspoon smoked paprika

    • 1/4 teaspoon cumin

    • 1/4 teaspoon cayenne pepper

    • 1 1/2 pounds steak (such as top sirloin), trimmed, seasoned with salt and pepper

In a blender, puree the tomatoes, cilantro, onion, red wine vinegar, chili powder, garlic powder, salt, smoked paprika, cumin and cayenne pepper until smooth. Pour into a jar and refrigerate until ready to use.

Season the steaks with salt and pepper, or your favorite steak seasoning. Grill or cook in a cast iron pan to your liking. Top the steak with the salsa, and serve with the quinoa black bean salad.

Salsa recipe yields about 2 cups of salsa.
