Cauldron Cakes with Treacle Syrup

    • 2 cups all-purpose flour

    • 1/4 cup granulated sugar

    • 1 tablespoon baking powder

    • 1/2 teaspoon baking soda

    • 1/2 teaspoon salt

    • 1 teaspoon cinnamon

    • 1 1/2 cups whole milk

    • 2 eggs

    • 1 teaspoon vanilla

    • 1/2 cup unsalted butter, melted

    • 1 cup pure maple syrup

    • 1/4 cup molasses

In a bowl, whisk together the flour, sugar, baking powder, baking soda, salt and cinnamon. Add the milk, eggs, vanilla and melted butter and whisk until well combined, but a few lumps remain. Set aside while you heat the griddle.

Preheat a griddle to 300 degrees. Grease with butter or non-stick spray and measure out 1/3 cup of batter per pancake. Cook the pancakes until golden brown underneath and lots of air bubbles are rising to the top, then carefully flip the pancakes and cook the other side until golden brown. Keep the pancakes warm in a 200-degree oven while you cook the remainder of the batter.

For the syrup, combine the maple syrup and molasses and warm in the microwave. Serve the pancakes with the syrup and extra butter.

Yields about 11-12 pancakes
