Cowboy Baked Potatoes

    • 4 russet potatoes

    • 1 tablespoon olive oil

    • 1 pound ground meat

    • 1 teaspoon salt

    • 1 teaspoon cumin

    • 1/2 teaspoon black pepper

    • 1/2 teaspoon chili powder

    • 1/2 teaspoon garlic powder

    • 1/2 teaspoon smoked paprika

    • 1/2 teaspoon crushed red pepper

    • 4 cloves garlic, minced

    • 1 cup spicy salsa (I used my homemade salsa)

    • 1 can (14 ounces) black beans, drained

    • 1 cup water

    • sliced green onions, grated cheese and sour cream

Preheat the oven to 400. Rub the potatoes with the olive oil and wrap each individually in foil. Bake for about an hour, until they can be pierced easily with a fork.

Meanwhile, in a large saucepan, cook the meat (use beef, lamb, pork, or a combination of all three) with the spices until browned. Add the garlic and cook for 2 minutes. Stir in the salsa, beans and water. Simmer over medium heat until reduced and most of the liquid has evaporated.

Split the potatoes open, serve with a spoonful of the seasoned meat and top with cheese, green onions and sour cream.
