Chocolate Raspberry Muffins

Chocolate Raspberry Muffins

    • 1 cup all-purpose flour

    • 1/2 cup granulated sugar

    • 6 tablespoons unsweetened cocoa powder ("special dark")

    • 1/2 teaspoon salt

    • 1/2 teaspoon baking soda

    • 2 eggs

    • 1/2 cup full-fat sour cream

    • 1/4 cup oil

    • 1/4 cup whole milk

    • 1 teaspoon vanilla

    • 6 tablespoons seedless raspberry jam

    • 1/2 cup bittersweet chocolate chips

    • fresh raspberries

Preheat the oven to 350 and line a muffin pan with 12 paper liners.

In a bowl, combine the flour, sugar, cocoa powder, salt and baking soda. Add the eggs, sour cream, oil, milk and vanilla and mix just until combined.

Spoon two-thirds of the batter into the paper liners. Add 1 - 1 1/2 teaspoons of jam on top of the batter, then spoon the rest of the batter over the jam. Sprinkle the tops of the muffins with chocolate chips and raspberries.

Bake for about 15-18 minutes, or until a toothpick comes out clean. Serve warm.
