Parmesan Potato Pork Bites

    • 1/2 pound ground pork

    • 3 cloves garlic, minced

    • 1 shallot, minced

    • 2 russet potatoes

    • 1 teaspoon coarse black pepper

    • 4-6 tablespoons milk or cream

    • 1/2 cup freshly grated Parmesan

    • 1 egg, lightly beaten.

    • 1 cup Panko bread crumbs

    • olive oil spray

Cook the pork in a skillet over medium heat until browned and crumbly. Add the minced garlic and shallot and cook for another minute or two, then remove from the heat.

Meanwhile, peel and chop the potatoes. Boil until tender. Drain. In a bowl, combine the pork mixture, potatoes, pepper, milk/cream and half the Parmesan and mash until the mixture holds together. Taste and season with salt, if needed. Cool in the refrigerator for 15-20 minutes until cool enough to handle.

Preheat the oven to 400.

Beat the egg in a small bowl; in a separate bowl, combine the remaining Parmesan with the Panko. Shape the potato mixture into balls, dip in the egg and then coat in the bread crumbs. Place balls on a baking sheet lined with a wire rack that's greased with olive oil spray. Once all the balls are made, spray the balls lightly with the olive oil spray.

Bake for 20-25 minutes until golden brown and crisp. Serve hot, with honey or your favorite dipping sauce, such as a garlic aioli.

Yields about 3 dozen balls.
