Apple Spice Muffins

    • 2/3 cup chunky applesauce

    • 3/4 cup dark brown sugar

    • 2 eggs

    • 1/2 cup whole milk

    • 1/2 cup vegetable oil

    • 2 teaspoons vanilla

    • 1 3/4 cups all-purpose flour

    • 1 teaspoon baking soda

    • 1/2 teaspoon salt

    • 1/4 teaspoon ground nutmeg

    • 1/4 teaspoon ground cloves

    • 1/2 cup cinnamon/sugar mixture(1/2 cup granulated sugar mixed with 2-3 teaspoons cinnamon)

Preheat the oven to 350 and line a muffin pan with 12 paper liners.

In a large bowl, whisk together the applesauce, brown sugar, eggs, milk, oil and vanilla. In a separate bowl, combine the flour, baking soda, salt, nutmeg and cloves. Add the dry ingredients to the wet and whisk just until combined. Divide the batter between the paper liners, using about 1/4 cup batter for each. Sprinkle about a teaspoon of the cinnamon/sugar mixture over the top of each.

Bake until a toothpick comes out clean, about 18 minutes. Cool for 5 minutes in the pan, then carefully remove the muffins from the pan and serve warm, with butter.
