Apple Cider Pancakes

    • 2 cups all-purpose flour

    • 1/4 cup granulated sugar

    • 1 tablespoon baking powder

    • 1/2 teaspoon baking soda

    • 1/2 teaspoon salt

    • 1 teaspoon cinnamon

    • 1/4 teaspoon nutmeg

    • 1/4 teaspoon ginger

    • 1/4 teaspoon cloves

    • 1/2 cup whole milk

    • 1 cup apple cider

    • 2 eggs, lightly beaten

    • 1 teaspoon vanilla

    • 1/2 cup unsalted butter, melted

Note: These pancakes are light and fluffy, lightly sweetened. For a heartier texture, you can use half all-purpose flour and half whole wheat flour.

In a large bowl, whisk together the dry ingredients. Add the wet ingredients and whisk until well combined. Let the batter rest for about 10 minutes.

Preheat a griddle to 300 F. Spray with non-stick spray, or grease with butter. Measure out one-third of a cup of batter for each pancake. Cook until browned underneath and set, and bubbles are rising to the surface, then carefully flip and cook the other side. Keep warm in a 200-degree oven while you finish cooking the pancakes.

Yields about 12 pancakes
