Quinoa Black Bean Salad

Quinoa Black Bean Salad

  • 2/3 cup red quinoa
  • 1 1/3 cups water
  • 1 can (14 ounces) black beans, drained and rinsed
  • 2 carrots, peeled and diced
  • 2 green onions, sliced
  • 1/2 cup fresh cilantro leaves, finely chopped
  • 1 tablespoon olive oil
  • 1 tablespoon lime juice
  • 1/2 teaspoon coarse kosher salt
  • 1/2 teaspoon coarse black pepper

 

Combine the quinoa and water in a medium saucepan; cook according to the instructions on the box.  When the quinoa is cooked and all the water is absorbed, remove from the saucepan from the heat and mix in the black beans, carrots, onions and cilantro.  Drizzle with the olive oil and lime juice; add the salt and pepper and toss.  Serve warm or room temperature.
