Oatmeal with Caramelized Bourbon Bananas

Oatmeal.

    • 2 cups old-fashioned oats

    • 4 cups water

    • 1/4 cup brown sugar

    • 1 teaspoon vanilla

    • 1 teaspoon cinnamon

    • 1/4 teaspoon salt

    • 1/4 teaspoon nutmeg

    • 1/8 teaspoon cloves

Bananas.

    • 1/4 cup unsalted butter

    • 1/4 cup brown sugar

    • 1/4 teaspoon salt

    • 3 bananas, sliced

    • 1/4 cup heavy cream

    • 2 tablespoons bourbon

For the oatmeal, combine all ingredients in a saucepan. Bring to a boil over medium heat, then simmer over low heat for 5-7 minutes, stirring occasionally, until the oatmeal is thickened.

For the caramelized bananas, melt the butter in a skillet over medium heat then stir in the brown sugar and salt. Cook for several minutes, then add the bananas, cream and bourbon. Continue cooking to thicken the sauce - the bananas will soften and melt somewhat into the sauce to create a banana caramel.

Serve the oatmeal with the bananas, and milk on the side, if you like.
