Chocolate Chip Cranberry Orange Muffins
Preheat the oven to 350. Line a muffin pan with 12 paper liners.
In a large bowl, whisk together the yogurt, orange juice,
orange zest, sugar, oil, eggs and vanilla.
In a separate bowl, combine the flour, baking powder, baking soda, salt,
cranberries and chocolate chips. Add the
dry ingredients to the wet and stir just until moistened.
Spoon the batter into the paper liners, filling them ¾ full. Bake for 18-20 minutes, until a toothpick comes out clean.
Cool on a wire rack for 5-10 minutes, then serve warm or room temperature.
Yields 12 muffins.
