Bacon Caprese Garlic Crouton Salad
4 slices bacon
1 shallot, minced
2 cloves garlic, minced
4 day-old buns, cut into cubes
1 cup cherry tomatoes, halved
1 cup fresh mozzarella balls
1 tablespoon olive oil
1 tablespoon balsamic vinegar
fresh basil
coarse salt and pepper
Chop up the bacon and cook in a large saucepan until crisp. Add the shallot and garlic to the pan and cook for several minutes until browned. Add the cubed bread and toss to coat in the bacon mixture.
Transfer the bread to a baking sheet and toast in the oven at 300 until the bread is toasted, about 5-10 minutes.
In a large bowl, toss the tomatoes and mozzarella with the olive oil, balsamic vinegar and basil, and season with salt and pepper. Add the toasted bread and bacon. Serve immediately.
