Classic Crispy Waffles

Classic Crispy Waffles

    • 2 cups all-purpose white flour

    • 1/3 cup granulated sugar

    • 1 tablespoon baking powder

    • 1/2 teaspoon salt

    • 1 teaspoon cinnamon

    • 1/4 teaspoon nutmeg

    • 1 1/2 cups buttermilk

    • 1/2 cup unsalted butter, melted

    • 2 eggs

    • 1 teaspoon vanilla

In a bowl, whisk together the dry ingredients; add the wet ingredients and whisk until combined. Preheat your waffle iron to the "crispy" setting and spray with non-stick spray. Cook the waffles for about 4-7 minutes, until golden brown and crisp; keep warm in a 200-degree oven while you cook the remainder of the batter. (If I know I'm going to have leftovers for the next day, I will under-cook them a bit so that when I toast them in the oven they don't end up over-toasted.)

Serve with butter, jam, maple syrup, and/or fruit.

Yields five 8-inch waffles
