Maple Glazed Salmon with Roasted Balsamic Strawberries

    • 3/4 pound fresh or frozen strawberries, hulled and quartered

    • 1 tablespoon balsamic vinegar

    • 1 1/2 pounds salmon, cut into 6-ounce portions

    • 1 tablespoon pure maple syrup

    • 1 tablespoon whole grain mustard

    • 1/4 teaspoon coarse black pepper

    • 1/4 teaspoon coarse salt

Preheat the oven to 425. Arrange the strawberries on a baking sheet and drizzle with the balsamic vinegar.

Place the salmon on a separate baking sheet. In a small bowl, combine the maple syrup, mustard, pepper and salt; brush over the salmon.

Roast for 10-12 minutes, until the juices are released from the strawberries and the salmon is cooked to medium doneness. (Frozen strawberries can be used instead of fresh; they will need to be roasted for about 20 minutes if still frozen.)

Spoon the berries over the salmon to serve.
