Abstract- Consumers are demanding clear information on labels and reassurance about the food they buy/eat and how it is produced• Food fraud is defined as “deliberately placing food on the market, for financial gain, with the intention of deceiving the consumer”. It is a big business and consumers are certainly being created. The modern food supply chain network has become very extensive, complicated, involve addition of ingredients at several stages of processing before incorporated into end product/ increases the possibility of food fraud. Verifying the description of food: composition, species identity, processing, the origin is challenging. New technology offers many techniques to identify food authenticity issues.
