Tomato Salad

1 lb. Cherry Tomatoes

4 Brussel Sprouts, thinly sliced

1/4 Cup Feta, crumbled

4 Baby Cucumbers, sliced

Handful of Basil Leaves

1/2 Red Onion, thinly sliced

2 Tsp. Red Wine Vinegar

4 Tsp. Olive Oil

Salt and Freshly Ground Black Pepper to taste

Cut the cherry tomatoes into quarters and scatter on a plate. Add in baby cucumber slices, Brussel sprouts, red onion, basil, and crumbled feta.

Mix together red wine vinegar, olive oil, pepper, and salt and drizzle on top of salad and gently toss. Taste and adjust seasoning. Serve and enjoy.
