Easter Cookies

2 Cups All Purpose Flour

1 Tsp. Cornstarch

1 Tsp. Baking Soda

1/2 Tsp. Kosher Salt

1 Stick of Butter, softened

4 Oz. Cream Cheese, softened

3/4 Cup Granulated Sugar

1/4 Cup Brown Sugar

1 Large Egg

1 Tbsp. Vanilla Extract

3/4 Cup Chocolate Chips

3/4 Cup Cadbury Mini Eggs, smashed with the side of your knife

Additional 1/2 Cup Easter M&M's for topping

In a large bowl, add in the butter and cream cheese, using an electric mixer, whisk until fully incorporated; about 1-2 minutes. Add in both of the sugars and mix until creamy about 1-2 minutes.

Mix in the egg and vanilla extract until just combined. Sift in the flour, cornstarch, baking soda, and salt. And mix until just incorporated.

Add in both of the chocolates and stir to disperse. Let the dough chill in the refrigerator for 1-2 hours. Or in the freezer for 25-30 minutes.

Pre-heat your oven to 350 degrees Fahrenheit.

Using a cookie scoop, scoop out your dough into a baking sheet lined with parchment paper or lightly greased. Top with a few additional mini eggs.

Bake your cookies for 10-15 minutes. Remove from the oven and allow them to cool on your cookie sheet for an additional 10 minutes. Then transfer them to a wire rack to cool completely.
