Greek Salad

3 Tomatoes, cut into chunks

1 Red Onion, thinly sliced

1/2 European Cucumber, cut into chunks

1 Red Bell Pepper, seeded and cut into chunks

1 Green Bell Pepper, seeded and cut into chunks

1 Cup Black Kalamata Olives

1/2 Cup Fresh Flat Leaf Parsley

1/4 Pound Greek Feta, Sliced

1/4 Cup Extra Virgin Olive Oil

3 Tbsp. Red Wine Vinegar

1 Tsp. Dried Oregano

Salt

Freshly Ground Black Pepper

Pita Bread - grilled

Combine the vegetables, olives, and parsley in a large salad bowl. Top with the sliced feta cheese.

Combine oil, vinegar, and oregano in a small container with a lid. Shake until well combined and pour over your salad. Season with salt and freshly ground black pepper. Let marinate until ready to serve.

Serve along side warmed or grilled pita bread and enjoy.
