Chakalaka

4 Carrots - finely shredded

1 Green Bell Pepper - finely chopped

1 Red Bell Pepper - finely chopped

1 Onion - finely chopped

1 Tsp. Ginger - minced

2 Cloves of Garlic - minced

1 Tsp. Tomato Puree

1/2 Cup Tomatoes

1/2 Cup Baked Beans

1/4 Tsp. Turmeric

2 Tsp. Curry Powder

1 Tsp. Salt

1 Tsp. Freshly Ground Black Pepper

2 Tbsp. Oil

In a sauté pan, heat up the oil and the start sautéing the onion, after 2-3 minutes add in the garlic and ginger, sauté for another minute. Add in the turmeric and curry powder and stir.

Add in your peppers, carrots, salt, freshly ground black pepper, and cook for 2-3 minutes. Add in the tomato paste, and tomatoes cook for a minute and finally add in the baked beans. Cook for an additional 3-4 minutes. Taste for seasoning and adjust if needed.
