Banana Coffee Cake

2 Cups All Purpose Flour

3 Tsp. Baking Powder

1 Tsp. Cinnamon

1 Tsp. Salt

3 Ripe Bananas, peeled and mashed

1 Cup Granulated Sugar

2 Large Eggs

2 Tsp. Vanilla Extract

1 Cup Milk


Crumb Layer

1/2 Cup Cold Unsalted Butter, cut into cubes

1 Cup All Purpose Flour

1 Cup Packed Brown Sugar

1/2 Cup Granulated Sugar

1 Tsp. Cinnamon


Glaze

1 Cup Powdered Sugar

1-2 Tbsp. Milk


Pre-heat your oven to 350 degrees Fahrenheit. Grease a 9 x 13-inch baking pan.


In a large bowl, add in all of the crumb topping ingredients and using your hand or two forks mash together until the mixture resembles crumbs. Set aside.


In a separate large bowl, add in the flour, baking powder, cinnamon, salt, and whisk until well combined. Set aside.


In a separate large bowl, add in the butter, brown sugar, granulated sugar, and using an electric mixer, mix until well combined about 2-3 minutes. After butter is creamy add in the eggs, vanilla extract, and mashed bananas, mix until just combined.


Alternate mixing in the flour and milk until all ingredients are incorporated, making sure not to over mix.


Pour half of the batter into the prepared baking pan, top with 1/3 of the crumb mixture. Then pour in the remaining batter and top with the remaining crumb topping.


Bake for 50-55 minutes, or until a toothpick inserted into the center comes out clean.


Remove from the oven and allow to cool for 15 minutes.


Combine the glaze mixture and drizzle over the top of the coffee cake.


Serve and enjoy.
