Maple Apple Oat Waffles

Ingredients for Waffle Batter:

3/4 Cup of All Purpose Flour

1 1/2 Cups of Old Fashioned Oats

1 1/2 Cups Milk

2 Eggs

1/2 Tsp. Salt

1/4 Cup Melted Unsalted Butter

2 Tbsp. Maple Syrup

2 Tbsp. Brown Sugar

1 1/2 Tsp. Baking Powder

1 Tsp. Cinnamon

1 Tsp. Vanilla Extract

Ingredients for Apple Filling:

2 Apples, peeled, cored, and diced

1 Tbsp. Unsalted Butter

1/4 Cup Apple Cider

1/4 Tsp. Vanilla Extract

1 Tbsp. All Purpose Flour

In a small saucepan, add in the apple filling ingredients excluding the flour and bring to a boil. Reduce the heat, and let simmer for 4-6 minutes. Drain, let cool, combine with the tablespoon of flour and set aside.

In a blender, add in all of the ingredients for the waffle batter, starting with the liquids and blend until smooth. Pour waffle batter into a bowl, add in the apple mixture, and stir to combine.

Preheat your waffle iron.

Spray your waffle iron with nonstick spray, add in the waffle batter, and cook the waffles until full cooked through. Let the waffles rest on a wire rack as the other waffles cook.

Serve with a side of warmed maple syrup and enjoy!
