Pumpkin French Toast

1 Large Brioche Loaf, about 2 lbs. - Sliced

1 1/2 Cups Pumpkin Pie Mix

2 1/2 Cups Half and Half

6 Large Eggs

3 Tbsp. Granulated Sugar

1 Tsp. Vanilla Extract

1 Tsp. Pumpkin Pie Spice

1/4 Tsp. Salt

1/2 Cup Pumpkin Seeds

Confectioners sugar, for dusting

Unsalted Butter, melted

Maple Syrup

Whipped Cream; optional


In a dish mix together the pumpkin pie mix, half and half, eggs, sugar, vanilla extract, pumpkin pie spice, and salt. Whisk until well combined.


Pre-heat your griddle.


Working in batches, dunk your bread into the custard and place them on your buttered griddle immediately. Cook for about two minutes on each side or until golden brown.


Dust with powdered sugar evenly over the top, sprinkle the pumpkin seeds evenly over the top.


Mix together melted butter and maple syrup and drizzle.
