Hey everyone! Now that it’s getting pretty cold out I thought I’d share my favourite way to warm up: Cozy homemade food!
Chai Latte Cookies:
Ingredients:
2 3/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 3/4 cups white sugar
2 1/2 teaspoons ground cinnamon
1 teaspoon ground ginger
1 teaspoon ground cardamom
1/2 teaspoon ground allspice
1/4 teaspoon finely ground black pepper
1 cup unsalted butter, softened
1 egg
1/2 teaspoon vanilla extract
Directions:
Preheat oven to 350 degrees
Sift together flour, baking soda, baking powder and salt.
In another bowl combine sugar, cinnamon, ginger, cardamom, allspice and black pepper. Remove 1/4 cup of the sugar-spice mixture, set aside to reserve for rolling the cookies.
Beat the butter and sugar-spice mixture until light and fluffy
Beat in egg and vanilla extract
Slowly blend in dry ingredients mixing until just combined.
Using a small scoop (2 teaspoons) roll dough into balls and then into the reserved sugar-spice mixture. Place dough balls on a prepared baking sheet about 1 1/2 inches apart.
Bake for 8-10 minutes.
Ingredients:
1 apple (cut into small pieces)
1 cup milk (or milk substitute)
2 tbsp chia seeds
1/2 tsp vanilla extract
1 tbsp maple syrup
1/2 tsp cinnamon
pinch of nutmeg and sea salt
Directions:
Blend and enjoy!
Super Easy Tomato Soup:
Vegetarian, GF, Vegan (sub butter with oil)
Ingredients:
2 tbsp unsalted butter
½ large onion (cut into large wedges)
1 (28-ounce) can of tomatoes or 10-12 medium tomatoes
1 ½ cups vegetable broth
fresh basil
sea salt
Directions:
Melt butter in a large pot
Saute onions for a couple of minutes
Add veggie broth, tomatoes and salt
Bring to a boil and simmer for 30-40 mins, stirring occasionally
Blend with an immersion blender/regular blender
Serve with grilled cheese/crispy bread!
2 Minute Apple Crisp:
Vegetarian, GF
Ingredients:
1 large apple (chopped into small pieces)
½ GF oats
2 tsp maple syrup/brown sugar
½ tsp butter
Cinnamon & nutmeg to taste
Directions:
Melt butter and saute apples until softened
Add oats, sweetener and spices to mix
Enjoy!
