Raspberry Prosecco Sorbet

Cook time: 15 minutes + time in ice cream maker
Total time: approx. 30 minutes
Yield: Serves 4
- 300 ml Prosecco
- 60 ml water
- 95 g sugar
- 500g raspberries
- In a medium bowl, mix together prosecco, water and sugar. Bring the mixture to a boil, then add the raspberries. Remove from the heat and allow to steep for 15 minutes.
- Pass through a fine meshed sieve to strain, pressing down on the fruit. Discard the seeds.
- Chill the mixture in the refrigerator overnight, then freeze in your ice cream maker according the manufacturer's instructions.
